Dumbbell kickbacks rely more on the rear-delt for a static contraction at its peak range of motion, making it anything BUT an isolation exercise. Besides, choice of exercise does not matter. You can "pack on mass" with any number of tricept exercises. There's no such thing as a mass building or defining exercise. All exercises can build mass or definition. Its the reps, sets, intensity, volume, frequency, and other factors that determine whether or not your workout is going to add mass, definition, or strength - not the choice of exercise.
